"Exposure to atmospheric air" means exposure to CO2, which can react with water to form carbonic acid: CO2 (g) + 3 H2O <--> H2CO3 (aq) + 2 H2O <--> H3O+ + HCO3- + H2O <--> 2 H3O+ + CO32-
So the phenolphthatlein turns colorless again because it's reacting with CO2 from the air.
