Would this fit on my fender bridge single coil pickup? Even if I took off the sides somehow? I just think that a white pickup cover would look good on my black tele with a white pickguard.
No, they are too large both in length and width. Also the screw holes (height adjustment holes) on the sides won't fit. Furthermore, the Telecaster cover is metal - it is part of the shielding of the pickup. The Stratocaster covers are plastic. Finally, there are holes for the pickup poles on the Stratocaster covers - none on the tele.
You can find tele pickup covers in nickel,crome, black and gold - just do a search on "tele pickup covers" in Google.
